Ingredients
- 8-12lb Spiral Ham
- Wassi’s Vintage Sunshine Rub
- Wassi’s Orange Cranberry Relish
- 1 Stick Butter
- 1 Packed Cup Dark Brown Sugar
- 2 Cups Orange Juice
Directions for glaze
- In medium saucepan, over medium heat melt butter
- Once butter is melted add 1 packed cup of dark brown sugar
- Once sugar is dissolved add 1 jar Wassi’s Orange Cranberry Relish
- Bring to a boil
- Turn down to a simmer and reduce by 1/3 to thicken
Directions for smoking
- Set up Big Green Egg indirect, platesetter in, 250 degrees with some sugar maple wood chunks
- Coat the entire spiral cut ham with Wassi’s Vintage Sunshine Rub (for better coverage lay ham on it’s side and allow rub inside spiral layers)
- Pour orange juice into drip pan, place wire rack on top and place ham on rack
- Put ham on Big Green Egg and smoke for 3 hours (total cook time will take about 4 hours. The ham is fully cook and you are just heating it to an internal temperature of 140 degrees)
- Glaze ham and cook for 1 hour
- Take off let rest, slice and enjoy!
